When oak chips are added to a wine or spirits, flavor and aroma compounds are extracted from the wood. The longer the oak chips are in contact with the product, the more compounds are extracted, resulting in a more pronounced character in the final product. This extraction happens quickly with oak chips. It is suggested that you sample the product weekly, or more frequently, until you reach the desired level.
Light Toast American oak chips add a barrel aged character to wine. For red wines use 4-6 ounces (2-3 cups) per 5 gallons of wine. For white wine use 1-3 ounces (1/2 to 1 1/2 cups).
Distilled spirits typically use a larger amount.
