Used to increase acidity in certain fruit wines. (Citric acid is the primary acid in oranges and other citrus fruits.)
Citric acid makes sanitizing solutions more effective by reducing their pH. Typical usage is 1 tablespoon citric and 1 tablespoon metabisulfite per gallon of water. Some references may have slightly different ratios and call for sodium over potassium metabisulphite. Commonly used for barrel cleaning and storage.
