A low-foaming, moderate speed fermenter, which works well between about 65 and 85 degrees F. A very low producer of hydrogen sulfide and sulphur dioxide, RC-212 is recommended for red varieties where full extraction is desired. Aromas of ripe berries and fruit are emphasized, while respecting pepper and spicy notes.
