Food-grade phosphate buffer used to adjust and “lock” mash ph in the ideal range. One tablespoon per five gallon batch is all that is required to ensure that the pH of the mash remains at 5.2 throughout mashing and sparging. Does not adversely affect flavor in any way, and goes a long way toward maximizing grain yields and eliminating astringency and other problems due to poor water chemistry.
